Chicken Soup on a Budget

There’s nothing like a hot bowl of nourishing chicken soup on a chilly evening or when you’re feeling a little under the weather. Fresh veggies, rich broth, yummy spices….delicious!

I usually make my chicken soup using a whole chicken BUT this past week, I made it using our chicken broth/soup bones. They come in a pack of 2 or 3-4lb and it’s basically the frame left after the breasts, legs & wings are removed. There is still a good bit of meat (about 1-1.5 cups shredded) and bones to make yummy soup. Plus a pack of broth/soup bones is less than half the cost of a chicken.

This soup serves about 8-10 people, but costs less than $2/serving!

Chicken Cure All Soup

Ingredients

  • 1 pack chicken broth/soup bones

  • 1 diced onion

  • 1 minced glove of garlic

  • 5 sliced carrots

  • 5 chopped stalks celery (including leaves!)

  • 2 T. chopped fresh parsley or 2 t. dried

  • 12 oz. egg noodles

  • 3/4 t. poultry seasoning

  • 1 bay leaf, broken in half

  • 1 T. salt

  • Freshly ground pepper to taste

Steps

Put chicken broth/soup bones in large soup pot and cover with water. Bring to a boil then simmer on medium low for 1-2 hours until the meat is falling off the bone. Take out and pull meat off the bones once cool enough.

Add onion, garlic, carrots, celery, parsley and spices to broth and simmer for a couple minutes until veggies are slightly tender. Add noodles and boil until al dente. Add chicken and simmer 5 more minutes.

Serve and enjoy with crusty bread or homemade grilled cheese, yum!
